Banana Nut Bread
½ cup shortening ½ cup butter 3 cups brown sugar 2 teaspoons vanilla 4 eggs ¼ teaspoon salt 3 ½ cups flour 2 teaspoons baking soda 6 small banana 1 cup chopped pecans ½ cup buttermilk
Cream shortening,butter, sugar, and vanilla until fluffy. Add eggs, one at a time, blending thoroughly after each addition. In a separate bowl sift flour, salt, and soda twice. Add dry ingredients alternately with milk to the creamy mixture. Combine bananas and nuts and blend into mixture. Pour into a greased angle-food cake pan and bake in 350° F oven for one and one-half to one and three-fourths hours. This may be baked in two greased loaf pans for one hour and 10 minutes.
