Bran Muffins
½ cup oil 1 ¼ cup sugar 2 ½ cups flour 3 cups bran cereal 1 cup boiling water ⅛ cup molasses 2 eggs 2 cups buttermilk (1 tablespoon vinegar to each cup of milk) 2 ½ teaspoons baking soda ½ teaspoon salt
Pour boiling water over bran cereal. Mix all ingredients together. Put mixture in refrigerator until needed. Bake in muffin tins 18-20 minutes at 375° F.
